Mango Pineapple Chutney is one of my favorite side dishes to serve with my main course. It is delicious, delightful and has always been a winner at any meal I have served.
1 Whole Onion
1 Firm Apple
2 cloves of garlic
1 cup diced pineapple
1 cup sugar,white,brown, turbinado
1 firm-ripe mango
2 bay leaves
2 tbls olive oil
1 1/2tsp powdered ginger
1tsp cumin
1/2tsp cinnamon
pinch of sage 1/4tsp
sea-salt large pinch-
season to taste
2tbls balsamic vinegar
1/2 cup dried currants or raisins
